Monday Meals: June 28 – July 4, 2010

Had a wonderful weekend in Nashville!  If you haven’t seen Toy Story 3, you totally should.  And try out the new Sopapillas Mexican Restaurant in Franklin – it’s delicious.

This weekend we’re off to Orlando to be a part of my dear friend Kelly’s wedding.  I cannot wait to celebrate with her!!  She will be a beautiful bride.  Then, I am flying from Florida to Wilmington, NC.  I will spend all of next week with my great-grandfather and mom.  Grandpa is 94 and doing wonderfully.  As great-grandma travels to D.C. for a conference, we’re just keeping him company and trying out some new recipes.  He’s one of the funniest men I know and I can’t wait to spend quality time with someone so full of life.

As a result, I think my blogging schedule is going to change a bit.  But it’s been off all summer.  I’m thinking about ways to re-vamp/re-conceptualize the blog as I move into a new stage in my life (married with a job!)  If you have ideas and/or encouragement, feel free to comment or email!

Monday Meals: June 22 – 28, 2010

We had a great time in New Jersey this weekend for the engagement party!  Now the future-Mr. Q is in Huntsville for a business trip.  So Monday, Tuesday, and Wednesday’s meals are my standard “for one” meals.  Easy!

This is also our first weekend in Nashville in almost a month!  Times have been crazy.  So I want to take advantage of it with some home-cookin’!

Monday: Quesdilla and Watermelon

Tuesday: Stuffed Peppers for One, Rice, Mixed greens salad

Wednesday: Panera (our Wednesday tradition)

Thursday: Turkey burgers and fixin’s with fruit salad

Friday: Spicy roasted chicken, salad, green beans, mashed potatoes

Saturday: Mediterranean chicken pizza, salad

Sunday: Chicken nachoes, fruit salad

Breakfasts:

Yogurt and granola
Cereal and milk, banana
Oatmeal, strawberries
Green Smoothies

Lunch:

Turkey sandwiches, apple, carrots, yogurt
Tuna Salad and crackers

Monday Meals: June 14 – 20, 2010

I’ve had a great (and somewhat productive) week and am looking forward to another.  It’s funny that summer needs to be this productive, but with an upcoming wedding, a new job on the horizon, and everything else that summer brings – it just doesn’t stop.

I’m over half way done with the Diva Detox and am loving it.  I have learned so much about food and am loving the goodness I’m putting to my body.  I will definitely be ready for some kind of carb or hunk of meat when I’m done on Wednesday, but this has totally been worth it!  Even my skin is loving it.  I’ll do a post about what I’ve learned about food when I’m done.

This weekend, the future-Mr. Q and I are off to New Jersey where my parents are throwing us an engagement party!  I’m pumped!  In a weird sequence of events, both Mr. Q and I lived in New Jersey (about 5 minutes apart) at different times in our lives.  Then we met in Nashville of all places.  With so many family members and friends in Jersey, it’ll be fun to celebrate our engagement there.  Oh, and we just got our engagement pictures back!  Krista Lee did a FANTASTIC job if you want to check them out!

Monday: Orchard green smoothie (Quesdillas for Mr. Q)

Tuesday: Apple salad (Chicken noodle soup for Mr. Q)

Wednesday: Celebration zucchini spaghetti (Panera for Mr. Q)

Monday Meals: June 7 – 13, 2010

(Getting a little personal this week :)

We had a fabulous weekend in Ohio watching Mr. Q’s sisters graduate and spending time with his family!  It was quick, but wonderful.  This coming weekend, Mr. Q is off to Boston for a bachelor party.  And the following weekend is our engagement party in New Jersey!  And it doesn’t stop there…  In July, we hit Florida, North Carolina, and Illinois.

And the best news yet… I got a job!!! I went to interview for a position last Thursday morning and less than 2 hours later, the principal called me to offer me the middle school math teaching job.  I’m pumped!  I loved the staff and principal I interviewed with, and though I never thought I’d be teaching middle school or just math, I can’t get over how perfect I think it will be for me.  It’s 20 minutes away from my apartment and I will have 9-11 students on my caseload.  It’s just so amazing how God works for the good of His children.

And lastly… my meal plan is a bit different this week.  I’ve been feeling quite gross/yucky as summer as approached.  I think it’s the hot and sticky weather of Nashville in combination with the constant eating that comes with working from home.  So I’ve decided (after much thought) to participate in a detox of sorts.  I will start on Wednesday at 6pm and end the following Wednesday.

I’m using the Diva Detox plan which incorporates mostly fruits and greens.  I’m excited about it and think it’ll be great for my body.  As I usually do, I will continue to cook for Mr. Q (I’m home for the summer, he’s still working) – but with him out of town this weekend, it seems like perfect timing. I am going to do my shopping without much attention to the bill.  I’ve been saving hundreds of dollars a month to build my stockpile.  I’m going to put those savings toward something good for my body and mind this week.

Finally getting this done!  I just couldn’t decide what I would make for tonight, so I’m going with an ol’ standby – Spinach Pasta.  It’s a favorite of me and Mr. Q.  This weekend is Mr. Q’s twin sisters’ (my bridesmaids) graduation in Ohio.  I cannot wait to celebrate with them and their family!

Monday: Spinach pasta, garlic bread

Tuesday: Curried carrot soup, watermelon

Wednesday: Shepherd’s Pie with garlic potatoes, strawberry fields salad

Thursday: Mashed potato quesdilla, green beans, strawberries

Friday: OHIO!

Sick, sick, sick.  I’m going to make this week easy on myself until I get better.  Also, one of my BESTEST friends is coming into Nashville for the first time EVER this weekend.  I’m pysched!!  We’re going to experience all that Nashville has to offer (or as much as we can fit) and a lot of that means food.  Any must-see places/restaurants/landmarks that you want to add to our list?
