Table for One: Tomato & Mozzarella Panini


This is my favorite version of a panini.  Paninis are a great spin on a normal sandwich for a single person.  You can make however many you want and serve them with whatever you’d like.  It’s a perfect “Table for One” dish.

I served mine with sweet potato fries and an apple.  I made another the next night (it was that good) and served it with soup.

Ingredients:

  • 2 pieces bread
  • 1 plum tomato, sliced
  • 1/4 cup shredded mozzarella cheese
  • 6 spinach leaves
  • 2 fresh basil leaves, torn
  • butter
  • pinch of garlic salt

Directions:

  • Lay 2 pieces of bread out and butter the top sides.
  • Layer the spinach, tomato, and cheese.
  • Add the basil on top, with the pinch of garlic salt.
  • Close sandwich.  Butter the top of the bread.
  • Flip onto panini maker (or into skillet).  Butter the top.
  • Let cook until bread is a bit crunchy.  Brilliant!

Serves: Just you!
