A Single Suggestion: Extending the Life of Spinach

I love spinach!  I eat it nearly every day – on sandwiches, as a salad, with fish, in a soup.  And it’s great for you!  But in cooking for myself, I am rarely able to get through a whole bag of spinach before it got all slimy at the bottom.  (Gross, I know.)  After much research, I have figured out a method to keep my bag of spinach good until the last leaf.

When I get the spinach home from the store, I pour it into a large plastic bag.  Insert one or two paper towels into the bag and zip it up.  Keep the bag in your vegetable drawer or crisper.  It is moisture that causes spinach to go bad, so the paper towels wicks the water from the spinach leaves.  If the paper towel becomes quite wet, swap it out for a new one and your spinach will have new life!
