Table for One: Banana Pancakes

A perfect Saturday morning breakfast… or Tuesday night dinner!


  • 1 cup flour
  • 1 tbsp sugar
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1/4 tsp salt
  • 1 egg, beaten
  • 1 cup milk
  • 2 tbsp vegetable oil (sub for applesauce for a healthier version!)
  • 1/2 tsp vanilla
  • 2 mashed bananas


  • Combine flour, sugar, baking powder, cinnamon, and salt.
  • In another bowl, mix egg, milk, oil, vanilla, and bananas.
  • Stir dry mixture into wet mixtures.  The mixture will be a bit lumpy.
  • Pour about a quarter cup batter onto hot griddle.  Flip when it gets bubbly on top and cook until golden brown on both sides.
  • Repeat!  And sing the Jack Johnson song while you’re flipping!

Tip: To mash bananas, put bananas in a ziploc bag.  Close, mush, and snip off the corner to add to mixture.

Serves: 4 servings (2-3 pancakes per person)

    Wouldn’t you know I have some bananas about to go bad? Sounds like breakfast for tomorrow!
