Table for One: Southern Green Beans

Another dish that was part of Triple Date spread.  However, I make this one all the time because green beans are my absolute favorite veggie!  I adjusted the amounts to make it serve about 2, but multiply the recipe to make it for more.


  • 1/2 pound of fresh green beans
  • 1/2 c. onion, chopped
  • 1 large clove garlic, minced
  • 2 slices of cooked bacon, crumbled
  • 1 tsp. crushed red pepper
  • salt and pepper to season


  • Snap ends of green beans and snap in half.
  • Place all of the ingredients in the sauce pan.
  • Add  just enough water to fill the bottom of the saucepan 1 inch deep.
  • Cover and bring to medium heat.
  • Simmer for about 15 minutes or until beans are tender (not soggy!)

Serves: 2 servings
