Table for One: Parmesan Crusted Chicken

Made this as part of the Triple Date spread.  Very crunchy and tender chicken.  You can make as many as you like at a time and it uses ingredients you probably already have in your pantry.


  • 3 boneless skinless chicken breasts
  • 1/2 c. Ritz cracker crumbs
  • 1/4 c. Parmesan cheese, grated
  • 1 tsp. dried parsley
  • 1/2 c. butter or margarine
  • salt and pepper to season


  • Preheat oven to 350°F.
  • In a small bowl, combine cracker crumbs, Parmesan cheese, and parsley.
  • In another bowl, melt the butter.
  • Dip each piece of chicken in butter and place in lightly greased glass baking dish.
  • Season with salt and pepper.
  • Sprinkle crumb mixture over the chicken.
  • Bake uncovered for 50 minutes or until chicken is thoroughly cooked.
  • Broil for 2 minutes (to make the top crunchy!)

Serves: 3 people (adjusts according to how many pieces of chicken you make)
