A Single Suggestion: Asapargus!


I never knew I liked asparagus until recently, but I’ve found that I love it!  If you haven’t tried it, give it a whirl – because it’s the perfect food for a single person.  I’ll tell you why…

Asparagus comes in bunches of about 15-25 stalks.  When I need a quick side dish for dinner, I take out 5-8 stalks (depending on the size) and chop off about 2″ from the end (the white part).  Put on a baking sheet and drizzle with olive oil.  Sprinkle with salt, pepper, and grated Parmesan cheese.  Bake in the over at 350°F for about 8 minutes.  Voila – perfectly cooked fresh asparagus!

I made this for my dad for his birthday.  Direct quote, “The best asparagus I’ve ever had!”  It’s so easy, and you can cook it by the portion.
