Table for One: Brooke’s Banana Bread


I love banana bread!  I buy bananas every week, and I can never manage to get through the whole bunch.  So by the end of the week, I put one or two bananas into the freezer just as they’re getting two mushy to eat.  When I’ve collected four frozen bananas, I make banana bread.  It’s great for breakfast (with cream cheese or butter), a snack, or a side for dinner.

The recipe is so easy – but it’ll sure impress the parents when they come into town!  (As mine did this weekend…)

If you don’t feel like you could eat the whole loaf in about 1 week’s time: cut it in half, wrap in foil, seal in a plastic bag, and freeze it!


  • 4 bananas (thawed if you pull them from the freezer)
  • 1/3 cup butter, melted
  • 1 large egg
  • 3/4 cup sugar
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp salt
  • 1 1/2 cups all-purpose flour


  • Preheat the over to 350°F.
  • Mash the bananas in a mixing bowl and then add the melted butter.
  • Mix in the egg, sugar, and vanilla.
  • Then the baking soda, cinnamon, and salt.
  • Lastly, add the flour and mix well.
  • Pour the mixture into a greased 4 x 8″ loaf pan.
  • Bake for 50-60 minutes.
  • Cool before removing from pan.
  • Enjoy!

    it wsnt the best banana bread i have tasted. not bad could be better
