Table for More: Spicy Sausage Corn Chowder

We made this last night. It boiled over, made a mess, and wasn’t thickening as quickly as I thought it should. However, it was one of the BEST dishes we have ever had! It was incredibly flavorful and filling and a great way to use up some of the Pork Kielbasa that was on sale at Publix last week. If you’re making it for one or two, freeze the leftovers.

*By the way, most of these ingredients you will probably have on hand. Those you don’t will cost you less than $5 at Publix – less than a $1 per serving.

Spicy Sausage Corn Chowder


  • 4 tbs. butter or margarine
  • 2 tbs. flour
  • ½ c. onion, chopped
  • 2 whole carrots, thinly sliced
  • 3 links Pork Kielbasa, cut into ¼-inch slices
  • 4 c. milk
  • 1 can (16 oz) cream-style corn
  • 1 can (10.5 oz) cream of celery soup
  • 3 potatoes
  • 1 tbs. hot sauce
  • 1 tbs. Cajun seasoning
  • ½ c. cheddar cheese, shredded
  • Parsley


  • Melt butter in large skillet or large-based saucepan. Add flour. Mix thoroughly.
  • Add onion, carrots, and pork kielbasa to mixture and sauté over medium heat for 5 minutes.
  • Meanwhile, scrub and poke potatoes with a fork. Wrap in plastic wrap and microwave for 5 minutes or until soft. Scoop out potato from the skin.
  • Add milk, corn, soup, potatoes, hot sauce, and seasoning to skillet.
  • Cover and cook on low heat for 25 minutes, or until thickened. Stir occasionally.
  • Just before serving, sprinkle with cheese and parsley.
  • ENJOY!
