Table for More: Chicken Chili and Cornbread

Talk about the ultimate comfort food – chili and cornbread! This is a great meal for a relaxed dinner party as it makes about 6 servings.  If you’re cooking for fewer, only combine the chili and cornbread for the number of servings you need. Save the cornbread for other meals, freeze the leftover chili, and have some extra-already-marinated chicken ready to go. Most of these ingredients have been or are currently on sale at Publix.

  • 1 box of Cornbread mix
  • 1 egg
  • 1/3 c. milk
  • 2 cups cut-up cooked chicken (see here)
  • 2 (15 oz) cans spicy chili beans, undrained
  • 1 (15 oz) can tomato sauce
  • 1 can whole kernel corn, drained (or 1 cup frozen)
  • 3 cloves of garlic
  • ½ cup shredded cheddar cheese


  • Make cornbread according to package directions.
  • In a saucepan, stir together chicken, chili beans, tomato sauce, corn, and garlic.
  • Heat to boiling.
  • Reduce heat to low and simmer for 10 minutes. Stir occasionally.
  • Put a piece of cornbread into bottom of each serving bowl. Pour chili on top and sprinkle with shredded cheese.
