Table for More: Spicy Italian Pork

This dish incorporates mostly ingredients that are on sale this week at Publix.  Have the butcher cut the boneless pork loin into chops to save several dollars.  Enjoy!



    1/4 c. extra virgin olive oil (Bertolli for $4.74 ea)
    4 boneless pork chops, about 1/4″ thick (loin is $1.99 lb)
    4 cloves of garlic
    1 can diced tomatoes (Del Monte for $0.54 ea)
    1/2 c. chicken broth
    1/4 c. dry white wine
    4 tbsp. minced parsley
    1/4 tsp. crushed red pepper


  • Season pork chops with salt and pepper.  Prepare other ingredients (slice, dice, etc).
  • Heat 2 tbsp. of olive oil in skillet.  Add pork and sear on both sides.  Remove pork and set aside.
  • Heat the remaining olive oil in the skillet.  Saute garlic for about 30 seconds.  Mix in diced tomatoes, chicken broth, wine, parsley, and crushed red pepper.  Cook and stir for 2 minutes, or until thickened.
  • Replace pork chops in skills, and continue to cook for 5-10 minutes or until pork is thoroughly cooked.

*Serve over rice (Minute Rice $1 ea) and with a salad (Publix blend $2 ea).
