Table for One: Jamaican Jerk Chicken & Apples

This sounds absolutely delicious!  I have so much chicken and lots of apples with all the sales recently.  This would be a wonderful fall dish.  Make one piece, two pieces, ten pieces… whatever you need for the night.  Serve with a salad and some rice or potatoes.  Delish!

jerk chicken

Ingredients:

    Chicken breast, no skin
    String cheese
    Small apple
    Caribbean Jerk marinade
    Cooking spray

Directions:

  • Place chicken between plastic wrap or in plastic bag and pound until tender.  (Can use meat tenderizer, frying pan, or rolling pin.)
  • Marinate chicken with Caribbean Jerk marinade in covered container for at least 30 minutes.
  • Preheat over to 350 degrees.
  • Line baking dish with aluminum foil and spray with cooking spray.
  • Core and slice apple with skin.
  • Cut string cheese into six equal parts.
  • Place chicken in baking dish flat.  Fill with 2-3 slices of the apple and 2 pieces of string cheese.  Fold chicken over and secure with a toothpick.
  • Bake for 20 minutes or until chicken is no longer pink.

*Try with pineapple or other types of marinades.

Number of Servings: You choose!
