Table for One: Tex-Mex Mac n’ Cheese

This is a delicious and SUPER easy dish!  It’s a couple steps beyond basic pasta, but uses only a few ingredients.  Substitute or add something different to spice it up!  All of the ingredients in the dish and the recommended substitutions have been on great sales over the past 2 weeks and continue to be… so try it out for yourself.

Tex Mac

Ingredients:

    1 pkg. mac n’ cheese dinner
    1 lb. ground beef
    1 cup salsa
    1 cup shredded cheese

Directions:

  • Make the mac n’ cheese according to the package directions.
  • In the mean time, brown the beef in a skillet on medium heat.
  • Drain grease, then add salsa and simmer for 5 min. Stir occasionally.
  • Mix the meat and salsa into the mac n’ cheese, and top with the shredded cheese.

Optional Extras/Substitutions:

    chicken or chorizo sausage instead of beef
    peppers
    corn
    chile powder or paprika
    black olives
    yellow or zucchini squash
    chopped onions
