Table for More: Mediterranean-Inspired Chicken Spaghetti Squash

Never knew that squash could taste so good… and so much like pasta!  This was a simple throw-together and a delicious meal.  We were worried when we opened the squash, it didn’t look stringy.  But cook it for 30 minutes, spoon out the sides, and voila!  Bon appetit!

Spaghetti Squash with Chicken


    1 spaghetti squash
    1 cup water
    1-2 boneless chicken breasts
    3 Tablespoons Italian dressing
    2 Tablespoons vegetable oil
    1 onion
    1 clove garlic
    1 1/2 cup chopped tomatoes
    3/4 cup crumbled feta cheese
    ~15 olives, any type
    2 cups fresh spinach
    2 Tablespoons chopped basil


  • Preheat oven to 350 F.
  • Cut squash in half lengthwise, and remove the seeds and stringy insides.
  • Fill a glass casserole dish with the cup of water, and then place the squash halves in the dish. Bake for 30-35 min, or until a sharp knife can cut through the squash with little resistance.
  • Slice up the piece(s) of chicken and put in skillet.  Cover with the Italian dressing and cook thoroughly.
  • In the meantime, chop the onion and olives, and mince the garlic.
  • Heat the oil in a separate skillet, and then saute the onion and garlic until the onions are clear and tender.
  • Add the tomatoes and olives, and heat for no more than 5 min before adding the spinach.  Stir for 1 minute, then remove from heat.
  • Remove the squash from the oven, and scoop the stringy pulp from the skin.  Place in a medium bowl, then add the sauteed vegetables, chicken pieces, feta cheese, and basil.
  • Mix and serve!
