Monday Meals: 9/28 – 10/4

Every Monday I’ll post my meal plan for the week.  Making a meal plan each week is the first step in the coupon game.  It’ll help you make a concise grocery list and will hopefully move you beyond the PB&J-or-pasta meal plan of your college days.  I post mine to give you ideas of what you can make with items that have recently been on sale.  Now go forth and plan!

This week I need to use up my farmer’s market finds – spaghetti squash, green beans, new potatoes, and okra.  It’ll be a “fresh” week!

Monday: Italian marinated chicken with Greek-inspired spaghetti squash

Tuesday: Packed dinner – ham sandwich, applesauce, apple, wheat thins

Wednesday: Panera day!  (My “Time for Myself” Wednesday Tradition)

Thursday: Marinated pork, green beans, roasted potatoes

Friday: Slow-cooker pulled pork, fried okra (from the farmer’s market)

Saturday: Frozen pasta meal (mid-day before the Vandy football game)

Sunday: Taco Night

Banana bread, cream cheese, fruit
Cereal, bananas
Waffles, homemade strawberry sauce, bacon
Toaster Strudels, yogurt

Ham or turkey sandwiches, carrots, apples, yogurt
Pulled pork and sourdough bread
