Table for One: Broccoli Chicken Cheese Soup

Made this soup tonight and it was delicious!  We topped our mugs with the biscuits to keep it nice and toasty.  This would be a perfect dish to make for one or two with a helping left for lunch the next day.  Enjoy!

Broccoli Chicken Cheese Soup


    1 to 2 boneless/skinless chicken breasts
    4 cups chopped fresh broccoli (or frozen chopped broccoli)
    1/2 cup chopped onion
    2 garlic cloves, minced
    2 cups chicken broth
    1 15 ounce can cream-style corn
    1 1/2 cups shredded cheddar cheese
    1 1/2 cup milk
    Salt & pepper to taste
    1 cup seasoned croutons


  • Cook chicken in large skillet or griddle.
  • Put the broccoli, onion, garlic, and chicken broth in a pan, and bring to a boil.
  • Reduce heat to simmer and cook 15 minutes or until vegetables are tender, stirring occasionally.
  • Meanwhile, cut the cooked chicken into bite-size pieces.
  • When vegetables are done, add chopped chicken, corn, cheese and milk. Heat thoroughly, stirring until cheese is melted.
  • Season to taste with salt and pepper.
  • Ladle into bowl or mug. Especially good when topped with biscuits or croutons.
